2016 Paso Doble, Sparkling

2016 Paso Doble, Sparkling
2016 Paso Doble, Sparkling

The wine name: Paso Doble
Paso Doble means “Double Step” and is one of the best known Spanish style dances. We use the name because this sparkling wine has grapes that come from Paso and to get the bubbles a second (double) fermentation was done in the bottle.

Appellation: Paso Robles
Paso Robles is located between San Francisco and Los Angeles. The most popular wine region in the Central Coast it is home to wineries and wine growers that specialize in a multitude of varietals. Its various microclimates provide ample areas to grow many of the most popular grapes in the wine industry.

Grape Varietal: Chardonnay
Chardonnay is the classic white grape originally from Burgandy France. Chardonnay is the grape used in the classic French Chablis and Champagne and  is the components of this amazing sparkling. In the US it grows well in warm to hot temperatures like Paso Robles and achieves the perfect sugar and acid content at maturity.

Source: Single vineyard
This wine is made from grapes that were harvested by hand at the break of day. The grapes come from a single vineyard to ensure maximum flavor, consistency and authenticity.

Visual:
Clear and crisp with just a shade of yellow. Tiny bubbles that are perfect for that celebratory event.

Aroma:
It has distinctive aromas of brioche bread, baker’s yeast, pineapple, green apples and peach.

Taste:
Brut style with balanced fruit, acidity, tannins and overall smooth silky mouth feel. 12.0% abv.

Production Notes:
All phases of Paso Doble production were done at the winery. The initial cuvee was fermented and stabilized in stainless steel. In-bottle fermentation (tirage) took 3 months in sparkling cages after which every single bottle was hand riddled and disgorged. A final addition (dosage) of simple syrup was done to give it the Brut level of dryness.

Pairings:
A delicious wine to serve with oysters, caviar, light cheeses, foie gras and spicy dishes.
