Paso Doble, Brut Rose Sparkling
The wine name: Paso Doble
Paso Doble means "Double Step" and is one of the best-known Spanish-style dances. We use the name because this sparkling wine has grapes from Paso, and to get the bubbles, a second (double) fermentation is done in the bottle.
Appellation: Paso Robles
Paso Robles is located between San Francisco and Los Angeles. The most popular wine region in the Central Coast it is home to wineries and wine growers that specialize in a multitude of varietals. Its various microclimates provide ample areas to grow many of the most popular grapes in the wine industry.
Cuvee: Chardonnay and Pinot Noir
This is a classic rose cuvee made from Chardonnay and Pinot Noir. The Chardonnay provides a classic profile of brioche, apple and stone fruit. The Pinot Noir adds depth with berry notes and a red fruit profile.
Estate Vineyard
This wine is made from our estate champagne clone grapes that were harvested by hand at the break of day.
Visual:
Clear and crisp with pink and salmon color. Tiny bubbles that are perfect for that celebratory event.
Aroma:
Made from a blend of Chardonnay and Pinot Noir, this Brut Rose expresses intense fruit characteristics that conjur visions of strawberries and red berries.
Taste:
Toasted brioche with a kiss of strawberry jam and pleasing bubbles that rise to any occassion. 12.0% abv.
Production Notes:
All phases of Paso Doble production were done at the winery. The initial cuvee was fermented and stabilized in stainless steel. In-bottle fermentation (tirage) took 3 months in sparkling cages after which every single bottle was hand riddled and disgorged. A final addition (dosage) of our proprietary liqueur was done to give it the Brut level of dryness.

Serve chilled with oysters, caviar, creamy cheeses, foie gras, and spicy foods.
